Hummus

Le hummus is a Mediterranean and Middle Eastern culinary speciality, appreciated for its creamy texture and rich flavours. Prepared from cooked chickpeas, tahini (sesame paste), lemon juice and garlic, it is seasoned with a touch of olive oil and sometimes spiced up with paprika or cumin. Versatile and nutritious, hummus is ideal as an aperitif, spread on pita bread or served as a side dish with raw vegetables. Rich in vegetable protein and fibre, it's a healthy and tasty choice, perfect for any occasion.

Ingredients
  

  • 300 grams canned chickpeas or cooked chickpeas
  • 2 à 3 tbsp. of Tahin sauce
  • ½ juice a lemon (more or less according to taste)
  • 2 pods garlic
  • 1 tbsp. ground cumin
  • 2 à 3 tbsp. olive oil
  • ½ tsp hot chilli powder optional

Method
 

  1. Blend the chickpeas with a little water.
  2. Add the Tahin sauce, lemon juice, garlic, cumin and salt.
  3. Blend well and add a little oil to make the sauce smooth and homogenous.
  4. Place in a dish and add a drizzle of olive oil plus a pinch of ground cumin for decoration!
