Method
- Pre-heat the oven to 200°C.
- First prepare the béchamel sauce
- Melt the butter and add the flour until the mixture is frothy.
- Add the cold milk, salt and pepper all at once. Stir until the sauce thickens.
- Remove from the heat and add the grated cheese and eggs.
- Pour over the dark shortcrust pastry beforehand in the pie dish.
- Bake in a hot oven for 40 to 50 minutes for a large tart.
- Bake in a hot oven for 25 minutes for tarts

- You can add bacon or aromatic herbs for extra flavour.
- Serve with a green salad for a balanced meal.
