Ingredients
  

  • 60 grams flour
  • 60 grams soft butter
  • ½ Lt of milk
  • 200 grams grated Gruyère
  • 2 eggs
  • salt and pepper
  • 400 grams shortcrust pastry approx.

Method
 

  1. Pre-heat the oven to 200°C.
  2. First prepare the béchamel sauce
  3. Melt the butter and add the flour until the mixture is frothy.
  4. Add the cold milk, salt and pepper all at once. Stir until the sauce thickens.
  5. Remove from the heat and add the grated cheese and eggs.
  6. Pour over the dark shortcrust pastry beforehand in the pie dish.
  7. Bake in a hot oven for 40 to 50 minutes for a large tart.
  8. Bake in a hot oven for 25 minutes for tarts
