Chicken Biryani

Le Chicken Biryani is an emblematic dish of Indian cuisine, known for its rich flavours and captivating aromas. This refined dish combines fragrant basmati rice, chicken marinated in a blend of spices (such as turmeric, coriander and garam masala), golden onions, and sometimes yoghurt for added tenderness. Slowly cooked in layers, it offers a unique taste experience where flavours blend harmoniously. Perfect for special occasions or convivial meals, it is often accompanied by raita or a fresh salad.

Ingredients
  

  • 1 chicken, cut into pieces and skinned
  • 3 cups water
  • 1 whole onion
  • 8 slices of garlic
  • 6 cardamoms
  • 5 cinnamon sticks
  • 10 cloves
  • 10 black pepper seeds
  • 2 tsp aniseed
  • 2 tsp coriander seeds
  • 4 leaves laurel
  • 1 tsp chilli powder
  • 1 onion, finely sliced
  • 6 tbsp. oil
  • 2 cups approximately washed basmati rice + double the amount in cups of water
  • salt and pepper

Method
 

  1. Place the chicken in a saucepan with the water, whole onion and spices (garlic, cardamom, cloves, coriander, aniseed and pepper), which have been wrapped in gauze and tied with a string.
  2. Cook for around 20 minutes.
  3. In another saucepan, fry the sliced onion in the hot oil with two bay leaves. Add the chicken pieces. Cook until the chicken is lightly browned, then add the rice and water (I prefer to add the cooking juices, as well as a knorr chicken and add the small packet of spices. Add the chilli powder.
  4. Cook until the rice is cooked.
