Tapenade with Green Olives

Tapenade with green olives is a tasty Mediterranean preparation, typical of Provence, which makes an excellent spread or accompaniment. Known for its rich flavour and olive aromas, this recipe is both quick and easy to prepare, perfect as an aperitif or as an addition to a dish.

Ingredients
  

  • 200 grams pitted green olives
  • 3 tbsp. olive oil
  • 3 pods garlic (more or less according to taste)
  • 1 net lemon juice optional
  • 1 tbsp. fresh thyme or basil optional
  • salt and pepper
  • 1 pinch hot pepper optional

Method
 

  1. Put all the ingredients in a blender
  2. Blend to a purée
  3. Add salt and pepper (and chilli)

Notes

Serve with slices of country bread, toasted or not.
