Method
- Heat a knob of butter and 1 tbsp olive oil in a saucepan.
- Add the chopped onion and garlic
- After one or two minutes, add the chopped smoked bacon.
- Cook for a further 5 to 10 minutes or until the liquid has absorbed.
- Add the tomato coulis and lower the heat.
- after cooking for one or two minutes, add the tomato paste
- add the chilli, salt and pepper and cook for about 20 minutes on a low heat
- At the end of cooking, add the cream
Cooking pasta
- Bring the water to the boil in a large pan with coarse salt.
- Once cooked al dente, drain and return to the pan.
- Add the sauce and Parmesan.
